What aperture settings should I use?

It depends.

With a small aperture (large number) much more of your photo will be in focus.

With a large aperture (small number) much less of your photo will be in focus.

I like to think of it this way; with a large number I get a larger depth of field.

And with a smaller number I get a smaller depth of field.
